For excursions outside of the resort, consider the Monster Truck Safari, an excursion to Paradise Island where you can snorkel among tropical fish, and the Ocean World Adventure Park where you can swim with the dolphins, have a sea lion encounter, snorkel in the reef aquarium, or get acquainted with birds of the rainforest.
